Chardonnay Adelaide Hills 2025

A delicate Chardonnay that's defined by its lively acidity and subtle complexity. Floral and ethereal on the nose, the white flowers develop towards citrus and grassy notes. On the palate, the wine builds weight and generosity through the subtle integration of oak, malolactic fermentation and flavours of grapefruit, baking spices and stone fruits. An expression of Chardonnay that typifies the Adelaide Hills, exhibiting elegance with ease.

Chardonnay was sourced from a single vineyard in Forreston, an area just north of Gumeracha. A north facing slope provides good drainage for the heavier clay-loam soils layered atop the sandstone base, allowing for both delicate flavours and retained intensity. An early harvesting date ensured that we brought the fruit in before the vines dried out too much, avoiding overly-concentrated flavours. 100% Entav clone selection from own rooted vines.

Picked in the early morning, the grapes were sorted in the winery via our sorting table before being 100% destemmed into the press. Left to cold settle overnight, the slightly hazy juice was mostly racked to seasoned barriques (5% new french), with a portion also being fermented in tank to retain freshness. Fermentation occured naturally in barrel, with 100% malolactic fermentation on this component, whilst the wine in tank had malolactic fermentation arrested to maintain a crisper acidity. Matured in barrel for 6 months before being blended right before bottling.
